INGREDIENTS
¼ cup Big Jr's Smoky Buttz Rub
1 slab spare ribs
Big Jr's Buttz Sauce
Equipment: aluminum foil, large pan, basting brush
INSTRUCTIONS
Let's get rubbin'
1Remove the membrane from your ribs.
2Place the rack curve side down on foil in a large pan (the side you removed the membrane from faces down).
3Sprinkle ½ of the rub onto the ribs.
4Flip and repeat on the other side.
5Refrigerate and marinate for at least 2 hours.
It's grillin' time
6Preheat your grill with coals on one side to create an indirect heat zone.
7Sear the ribs on the hot side, flipping after 5 minutes so both sides sear.
8Move the ribs to the indirect side and cook 2.5 to 3 hours.
9Brush the top with Buttz Sauce and place the sauced side down on the grill.
10While that side chars, sauce the side facing up. Grill about 5 minutes per side until you get charred grill marks.
11Turn ribs curve side up and slice between the bones.
12Serve with additional Smokin' Buttz BBQ Sauces.
SAUCE BOSS TIPS
✦The wrap job: wrap the ribs in foil halfway through cooking to retain moisture, then unwrap for the last 30 minutes to brown and caramelize.
✦Let them rest 15–20 minutes in foil so the juices redistribute.
✦On a smoker, hickory or applewood chips add another layer of smoke. You can also spread 1 tbsp of mustard on the ribs before the rub.
