INGREDIENTS
2 tbsp sesame oil
2 tbsp canola or vegetable oil
1 lb medium-large fresh shrimp, cleaned (15–20 count)
1 cup frozen peas and diced carrots
½ cup frozen corn
3 tsp garlic
½ tsp ground ginger
3 large eggs, lightly beaten
4 cups day-old rice
2–3 green onions, thinly sliced
3–4 tbsp soy sauce
½ tsp salt
½ tsp black pepper
½ cup Big Jr's Smokin' White Sauce
INSTRUCTIONS
1In a large non-stick skillet or wok, add the sesame and canola oil and the shrimp. Cook over medium-high heat about 3 minutes, flipping halfway. Don't overcook. Remove shrimp and set aside, leaving the oil in the pan.
2Add peas, carrots and corn and cook about 2 minutes, until vegetables begin to soften.
3Add garlic and ginger and cook 1 minute, stirring.
4Push vegetables to one side, add the eggs to the other side and scramble.
5Add shrimp, rice and green onions, drizzle with soy sauce, season with salt and pepper and stir. Cook about 2 minutes until heated through.
6Stir in the Smokin' White Sauce.
